I doubled this recipe. I didn’t have any bay leaves and not enough chili powder. I had just under half of what I needed, so I used Dimply’s Rub & Grill Authentic Memphis Pork Dry Rub Seasoning & Marinade to fill in the rest of what I needed to double the recipe. I put in the tomatoes with the juice. I let it simmer for 2 hours, then added 2.5 pounds of plain cooked hamburger meat. From there I simmered the chili for another hour. Topped with sour cream and shredded cheese and served with plain biscuits. The 3 grown men in my family loved it. Only 1 had seconds, but he can a eat a horses’ worth of food and Lord knows where he puts it! All in all this was well worth the time and effort and filled the vast emptiness of the bellies in my family very well.
I have kept a pot of this chili on hand since finding the recipe. For family members that don't like it so spicy, I omitted the two cans of green chili peppers and they loved it. Great over brown rice. This really is the best veggie chili I have ever had.
